Green Hommus Dip
1 small can of chickpeas, rinsed
1 large garlic clove
juice 1/2 lemon
1/4 cup of olive oil (depends on how you like your consistency)
a large handful of green herbs - I used parsley this time, but coriander, mint or a mixture would also work
salt and pepper to taste
Place all ingredients in a bowl and puree with a stick blender adding additional olive oil as you go to get your desired consistency.
