Banda Salad


Serves 4


2cm grilled shrimp paste

3 chillies (hot or mild to your taste)

2 tsp salt

6 shallots finely diced



1 cup fried tuna shredded

½ cup crushed almonds pureed into a soft paste

½ cup chopped almonds

1 tbsp white wine vinegar – or fresh lime juice

3 tbsp coconut oil

¼ cup water



2 tomatoes chopped

1 carrot chopped
1 handful of green or snake beans chopped

1 cucumber chopped

2 cups of water spinach or cabbage or bok choy chopped



Combine all paste ingredients together in a mortar and pestle or spice blender, and then add all other ingredients. Try to chop the salad ingredients into similar sized pieces – i.e. all shredded or all chopped.

You can use canned tuna if you do not have fresh tuna, but it won’t be as good! As always almonds can be substituted for cashews.
