INGREDIENTS

125g sugar

1/2 cup shredded coconut

2 tsp honey

2 cups self raising flour

125g melted butter

1 egg

milk to a soft consistency

Filling

1 1/2 cups icing sugar

lemon juice or water if not available

Jam - berry flavours are best

METHOD

In a bowl mix together all biscuit ingredients until soft, but able to be rolled and hold their shape as a ball.

Make 20 balls and then once well spaced on a tray flatten them with a fork to give a nice imprint.

Bake at 200 C for about 10 mins.

Allow to cool

For the filling - combine icing sugar and lemon juice to a thick consistency.

Spread icing sugar on one side of the biscuit, 1 tsp of jam on the other side - and sandwich together
