Pizza Dough and Sauce

DOUGH INGREDIENTS
 

1 1/4 cups of warm water (approx)

2 tsp yeast

3 - 3 1/4 cups plain flour

1 tbsp vegetable oil 

METHOD

Place all the dry ingredients into a large bowl and add enough warm water until the dough

just comes together, turn out onto a floured surface and knead for 10 minutes.

The dough should be quite soft, almost sticky. If it is to sticky slowly add more flour as you knead until it is just pliable.

If it is to dry add more water slowly.

The kneading is really important so 10 minutes is ideal.

Return to an oiled bowl and cover with a tea towel. Allow to rise for at least 1 hour or until doubled in size.

Punch down, divide into pizza size balls (this will depend on the size of your trays.

Oil the trays and spread the dough out with your fingers gently, trying to not put holes in the dough. Leave it to relax on the tray for 10 minutes and you should be able to spread it out even further.

SAUCE INGREDIENTS

2 cans tinned tomatoes

1 tbsp olive oil

2 garlic cloves crushed

fresh or dried herbs

salt and pepper to taste

sugar (if the tinned tomatoes aren't sweet enough)

chilli (fresh or flakes) if you want a spicy sauce.

METHOD


Combine all ingredients together in a saucepan and allow to simmer for 20-30 minutes until reduced in quantity and thickened.

COOKING THE PIZZA

Once you have assembled your pizza, cook in a moderate oven for 15 to 20 minutes - or until it looks like a yummy cooked pizza should
